01 - Slice each croissant in half horizontally using a bread knife.
02 - Generously spread softened goat cheese onto the bottom half of each croissant.
03 - Arrange thin slices of apple evenly over the goat cheese.
04 - Drizzle with honey or fig jam if desired.
05 - Top with a handful of arugula or baby spinach and season with freshly ground black pepper.
06 - Sprinkle chopped walnuts or pecans over the greens for extra texture, if using.
07 - Close with the top half of the croissant. Serve immediately, or wrap and refrigerate up to 2 hours.
