07 - Sprinkle grated cheddar and Monterey Jack cheeses uniformly over the beef layer.
08 - Scatter sliced jalapenos, spring onions, and diced tomato across the cheese-covered chips.
09 - Place in preheated oven and bake for 8–10 minutes until cheese is melted and bubbling.
10 - Remove from oven, sprinkle with chopped fresh coriander if desired, and serve immediately with sour cream, salsa, and guacamole on the side.
