# What You'll Need:

01 - 1.5 lbs Yukon Gold or russet potatoes, diced

19 - 1/2 cup canned black beans, drained and rinsed

21 - 1/4 cup chopped fresh cilantro
22 - 1 medium avocado, sliced
23 - 1/2 cup sour cream or Greek yogurt

# How to Cook:

01 - Preheat oven to 425°F and line a baking sheet with parchment paper. Toss diced potatoes with olive oil, smoked paprika, salt, and pepper. Spread evenly on the baking sheet and roast for 25-30 minutes, stirring halfway, until golden and crispy.
