01 - Whisk together soy sauce, oyster sauce, sesame oil, honey, rice vinegar, and cornstarch slurry in a small bowl. Set aside for later use.
02 - Heat a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5–6 minutes. Transfer to a plate and set aside.
03 - In the same skillet, add a splash of oil if needed. Sauté garlic, ginger, and the white parts of green onions for 1 minute until fragrant.
04 - Add broccoli, bell pepper, and carrot. Stir fry for 3–4 minutes until just tender but still crisp.
05 - Return the turkey to the skillet. Pour in the sauce and toss everything together. Stir fry for 2–3 minutes until vegetables are coated and sauce thickens.
06 - Remove from heat. Garnish with sesame seeds and chopped green onions or cilantro if desired. Serve hot, with rice or noodles if preferred.
