# Expert Advice:

01 -
  • You control exactly what goes into your sausage no mystery ingredients or excessive sodium
  • Turkey thigh keeps these incredibly juicy without the heaviness of pork sausage
  • Mix up a big batch of spices once and youre set for multiple breakfasts
02 -
  • Turkey cooks faster than pork so do not wander off or you will have dry disappointing patties
  • Do not press down on them with your spatula you are squeezing out all the juice you worked to keep in
  • These freeze beautifully raw so double your batch now and thank yourself later
03 -
  • Keep the meat cold while you work with it, making the fat less likely to melt out during cooking
  • Use a scale to portion your patties so they all cook at the same rate
