01 - In a small saucepan over low heat, combine the honey and chili flakes.
02 - Gently heat the mixture for 10 minutes, stirring occasionally. Do not let it boil; just warm enough to infuse the flavors.
03 - Remove from heat and let steep for 10-15 minutes for more intense heat.
04 - Strain the honey through a fine-mesh sieve to remove the chili flakes, or leave them in for extra kick and visual appeal.
05 - Stir in apple cider vinegar if using for added brightness.
06 - Pour hot honey into a clean, airtight jar or bottle. Cool completely before sealing.
