01 - Whisk together almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl. Let stand for 5 minutes, then stir again to break up any clumps. Cover and refrigerate for at least 2 hours until thickened to pudding consistency.
02 - Spoon chia pudding into the bottom of 4 glasses or jars. Add a layer of diced watermelon over the pudding. Top with mixed fresh berries.
03 - Repeat layering process if desired, finishing with fruit on top and a sprinkle of granola.
04 - Garnish each parfait with fresh mint leaves. Serve immediately or keep refrigerated until ready to serve.
