01 - Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper and lightly grease the surface.
02 - In a large mixing bowl, combine rolled oats, all-purpose flour, light brown sugar, granulated sugar, baking powder, and salt. Pour in the melted butter and mix until the texture is crumbly.
03 - Reserve 1 cup of the mixture for the topping. Press the remaining mixture evenly and firmly into the prepared pan to create the base crust.
04 - In another bowl, toss together diced strawberries, lemon juice, cornstarch, and granulated sugar. Stir gently to fully coat the strawberries.
05 - Evenly distribute the strawberry mixture over the oat crust layer.
06 - Sprinkle the reserved oat mixture evenly over the strawberry filling.
07 - Place in the oven and bake for 35 to 38 minutes, or until the crumble is golden brown and the filling is bubbling.
08 - Allow bars to cool completely in the pan. Lift out using the parchment paper and slice into individual bars.
